Steam Extraction

CFW has designed, manufactured and installed a range of extraction units for different customers operating kitchens of various sizes. Steam extraction canopies (also known as vapour hoods, condense hoods or condensate hoods) are designed to remove captured steam from air by condensing it. They also help to exhaust heat from the kitchen with appropriate ducting.

Since they fall under the category of Type II hoods, steam extractors are ideally used with appliances with low emissions of grease vapour, such as industrial dishwashers and pots used to boil water-based liquids. If this principle is strictly observed, steam extraction hoods will require only very infrequent cleaning. Unlike ordinary extractor hoods, they usually have angled baffle plates to facilitate condensation, as well as a drain-off point. The exception to this is exhaust-only hoods.

According to South African law, all commercial kitchen equipment that produces steam needs to be extracted. This includes ovens, stoves, fryers, gas stoves and grillers. Many commercial dishwashers produce very large quantities of steam when opened and require the installation of steam extraction equipment. In general, appliances that create “plume surges” (i.e. those that suddenly vent quantities of vapour when opened) require more canopy overhang than others. Heavy-duty applications which produce large amounts of condensate tend to require hoods with more baffles to be effective.

Steam extractors and other kitchen hood equipment should be installed as close as possible to the equipment generating the steam. Different designs are used depending on where the equipment generating the steam is located in the kitchen.
