Drying of Bread and Rusks

Baked products need to be dried evenly and gently. Temperatures that are too high can damage the product, and uneven drying results in inconsistent quality. Cracked products or those suffering from case hardening (and thus too much inner moisture) are much less attractive to consumers and also have shorter shelf lives.

Convection drying with heated air helps to ensure that bread and rusks are of high quality. CFW’s drying ovens deliver many benefits:

  • Energy savings result from the recirculation of hot air in an enclosed space.
  • High production rates are possible with short warm-up times and fast heat transfer.
  • Forced ventilation with a high-efficiency fan ensures that the heated air reaches the entire surface, resulting in an evenly dried product.

In order to control airflow and increase heat transfer for efficient energy use, turbulence control dampers and/or ducting can be fitted to various zones of ovens. Some degree of trial and error is usually necessary to determine the best turbulence parameters for a particular product. Extraction fans to remove moisture from the oven chamber are also used. These should be carefully controlled according to the product type and volume, as extra air must enter the chamber and be heated to replace the exhausted air, increasing energy costs.
