Food drying has been used since time immemorial to preserve food and prevent spoilage. Effective drying systems prevent the build-up of toxins in the food that results from mould growth and the unwanted transfer of moisture from the dried items to other products or to the air.

Today, mechanical dehydrators or dryers are the norm because they offer faster drying with a smaller risk of spoilage. There are three main types of industrial food drying systems in widespread use: convection drying, contact (conduction) drying and radiation drying. Often, a vacuum system is used to remove the moisture from the environment if contact or radiation drying is used. Freeze drying is another possibility, used for already fairly dry products. Convection drying is often preferred, since it removes moisture evenly from the food, generally by passing hot air around the food items. The heated air has a reduced relative humidity, increasing the drying effect of convection drying systems.
